The idea is that if all the votes come in on the same day, it will be harder to assess how many ballots have been cast where and hence how many ballots are needed where to rig the election. If they don't get the math right, they can be exposed.
I'm not claiming this is true. But that's the idea. As a Republican in a blue state, I'm not voting until the day of the election, on the off hand reason, also, that them holding my ballot longer gives them more chances to make it disappear.
