Really depends on a bunch of factors. Do you want to be able to conceal it under a jacket? A bunch of good stuff like safariland ballistic panels can do that. Is money no object? Ceramic plates stop multi hits great, but it can crack easy and not durable for getting down and dirty. Are you a larger guy? Might want to look into curved plates.
I personally use ar500 level 3+ lightweight but there are better options if you want heavier stuff for shorter periods of time.
Mine fits in a backpack. Also have some level 3 kicking around
