I don't believe sovereign immunity would hold here. Immunity is generally given for civil damages. Trump, presumably seeking an equitable remedy, would not be entitled to legal remedies regardless of any immunity. The point is to get the courts to interpret if impeaching a former official is constitutional. That is the entirety of their domain and they are the only domain which has that role.

He could possibly sue Leahy, acting in his capacity as president of the trial. Sort of like how people sue the Attorney General or other officers when seeking to declare a law unconstitutional

Trump's legal team should subpoena the Trump supporters who appeared in the house managers presentations. The house managers already used their testimony as part of their evidence. The defense should have the opportunity to cross examine

This is a trial. You do not stop and resume trials at convenience, but rather only for necessity. The GOP senators must stand firm and not allow any other Senate business to be conducted. All of the evidence must be fresh in the jurors minds and not corrupted by other business which occurred between the presentations by the managers or defense and the vote to convict or acquit.
