What about Vivaldi? It's chromium-based but open-source. I have no idea if they're based or not though, so once again - if someone here knows more - please comment.

Yalp has been discontinued. Use Aurora Store instead. Also Aurora Droid for additional non-google-store apps.

NewPipe is a great alternative on android. It lets you watch youtube videos without an account. Lets you export your subscriptions and store / manage them locally. Plays videos without ads.

Because Android OS is open-source, there are community-made versions of Android that are not tied to Google or other big companies. Such versions are usually stripped of bloatware and have better privacy. LineageOS is one example. You can "degoogle" your android device without ditching Android. Here's what you need to learn, in that order:
Step 1: How to unlock bootloader (required for Step 2)
Step 2: How to flash custom recovery like TWRP (makes Step 3 easier)
Step 3. How to flash custom ROMs (LineageOS is a good alternative, but you can find more on https://forum.xda-developers.com)

In your analogy one could argue that retaliation is a form of self-defence, because the shooter still has a loaded gun and can easily shoot you again. (You can also argue that they're an immediate danger to the public, and you had to perform citizen's arrest). It makes even less sense to attack the non-shooter when the shooter is much more of a threat.
It's harder to justify retaliation against a cup of coffee that was already thrown, making the attacker effectively unarmed. If they continued the attack in some other way (fists and whatnot) - you could argue self-defence, but the couple were about to leave and didn't show intention of continuing the attack. I rationalize it as this: if you're not allowed to shoot fleeing suspects - you're not allowed to retaliate with fists either.
Something I don't get, and nobody else seems to want to touch the topic with a 10-foot-pole:
Chad bolted after the couple and punched the guy who didn't even throw the coffee - wouldn't that also be considered assault? If he presses charges - wouldn't the couple also be able to press assault charges?
Sadly, Google is still a far superior search engine (at least for anything that isn't political). Don't think there are any comparable alternatives at the moment. :/
