I've been wanting to smoke a bratwurst fatty for years, so I'm really proud of my creation. I realized a fatty is just a platform completely open to customization, and my first thought was a brat one with cheese curd filling. I've also made fajita ones with peppers, onions, and jack cheese in the middle.

Once you get the technique down it isn't too tough. It's a 7x7 lattice with 1.25-1.5 lbs of ground meat under it.

I'm nervous actually lol

I've been wanting to smoke a fatty like this for a while, and I really hope it turns out properly. It's almost $50 in meat.

Those fatties on the right are made from brat meat with cheese curd, sauerkraut, and onion filling. It's pretty much the most Wisconsin thing to ever exist. Being enjoyed with New Glarus too.
